  la fraicheur de produits bien retravaillés par rapport aux traditions culinaires espagnole et niçoise...la probité des prix

  salle un peu froide cuisine fine mais que l'on peut trouver un peu polissée; en somme, c'est bien mais on sent à tout moment que le chef est doué et qu'il peut mieux faire.

  Pros

  Upon entering this restaurant the effect is of a small (30 covers) bright and air-conditioned room. It is tastefully decorated (it displays some works of a local artist on the walls). The chairs are high backed cream leather topped with dark stained hardwood and are very comfortable. The overall effect is one of tasteful elegance. This is a husband and wife team with the wife at front of house exuding genuine warmth and hospitality. The husband (formerly with Alain Ducasse) is the powerhouse in the kitchen. The overall effect of the food is fresh and locally sourced ingredients of exceptional quality. The flavours reflect the ingredients and are, both vibrant and full of flavour. By way of example, we ate there last week and ate as follows: An appetiser of fresh melon served with a shot glas of port and a miniature Wilson salad. Very pleasant. My starter was summer vegetable gazpacho with shrimps and small croutons. It was a vivid reminder of the flavours that are possible in Provence. My wife's starter was several types tomato that varied not only in taste but also visually (striped, green, red, yellow). As one who has scoured the Cours Saleya for wonderful tasting tomatoes, she can vouch that she has found nothing remotely to match the exquisite flavour of this dish which was accompanied by Italian cheese and a pesto dressing that complimented the dish perfectly. As a main course I had beef tenderloin with creamy polenta and red wine sauce (9€ supplement). At home we source, when we can get it, belted Galloway and at other times, alternative rare breeds, as flavour is always paramount. This beef (sourced, I believe, from Germany) matched the Galloway for flavour and tenderness. The sauce complented the meat perfectly, being neither too sharp or too rich. My wife had filet of seabass which was cooked to perfection (it is all too common, even in good restaurants, to find the meat of this delicate fish, slightly overcooked). It also had the taste of wild fish and not the all too common farmed variety. It was accompanied by medley of miniature vegetables that simply tasted of Provence. A pre-desert arrived which was a shot glass of a fresh strawberry compot. A first rate palate cleanser. For desert I had minute chocolate 'milkshake' being a frothy confection liberally laced with pieces of French dark chocolate. It was accompanied by fesh strawberries and a very clever and fine 'chocolate biscuit'. My wife had a seasonal fresh fruit salad which was both beautifully presented and tasted fabulous and was perfectly balaced againstthe accompanying sherbet and soft lemon biscuit. The wines were all reasonably priced. We chose a nicely balanced wine from Provence. Considering the quality of the ingredients and the high level of cooking; the price of 44€ for the menu (plus 9€ for my beef) was exceptional value.
